Kirshwasser 2 oz. • Heat sugar and water only until sugar is dissolved, add in Kirsh and chill until use. Cherry Filling Sugar 16 oz. Corn Starch 3 oz. Salt, kosher 2 tsp. Cherry Juice 7 oz. Cherries, Sour Black 2.5 lbs Lemon Juice 2 tsp. • Mix sugar, modified starch and salt together. Set Aside. • Combine water, cherries, lemon juice into pot, bring to light boil. • Add dry ingredients while whisking and continue to whisk and boil for two to three minutes or until starch is activated. • Remove from heat. • Cool to room temp, then chill until use. Kirsh Whipped Cream Heavy Cream 1 qt Granulated Sugar 10 oz. Vanilla 1 oz. Kirshwasser 2 oz. Gelatin powder 1 packet Take gelatin powder and add to sugar, then add to all ingredients together in a mixer bowl. Stir to dissolve sugar slightly for 1 min, then start to whip at medium high speed until firm peak.
